Typical murky pet-nat. VA, dried herbs, apples and yeast. Good acidity, fresh but it's damn too simple and not complete.
I looked forward to opening this bottle as a treat, but bottle variation decided to kick in. Sometimes it's an interesting feat, but not this time. Where is my clear and complex Pet-Nat? This bottle is a typical Pet-Nat - murky and simple with all the common descriptors. And it lacked acidity, unfortunately.
I tasted it blind and didn't guess. I was not sure about ageing on the lees. In my book, it was either absent or minimal. Folks, it turned out to be a Georgian Pet Nat made of Tsolikouri and Tsitska blend! Peach candy, white flowers, tarragon (hehe) and slightly baked apples. Good acidity and structure. It's just delicious with a pleasant Jerez touch in the finish. I only wish the aftertaste would be longer.
