This wine can't decide what it wants to be when it grows up. So what does it do?
First, it roars at you with the wildness of fermentation, throwing notes of Borodinsky bread and coriander. Then, it turns melancholic, with peppery and green notes. Eventually, it slides into a midlife crisis and just reminisces about how tasty plums were in its childhood, before finally sipping on cough syrup.
The structure is interesting. Initially, it bites with a thousand tiny bubbles like piranhas, more reminiscent of a rich wine diluted with soda. But fish doesn't live forever, so the wine becomes flat and gentle, like toothless gums.
This uncertainty is annoying because it's so relatable. Yet, as I ponder, glass after glass empties. So let's put it this way: drinking this wine is interesting, even if it's not complex and somewhat flat.
