The Ferrum Chardonnay is a single-vineyard wine produced by Crystallum from their estate at Shaw's Mountain, located just outside the Hemel-en-Aarde region near Hermanus. The grapes are whole-bunch pressed. Following an overnight rough-settling, the juice is transferred to barrels for fermentation. The fermentation process occurs spontaneously, and the wine is then aged over a period of 10 months in 2,600L Foudre.
Ratings
This wine offers a blend of green apricot, lime, floral notes, hay, and hazelnut, with a buttery character. While not overly complex, it demonstrates good acidity and a roundness that may improve with age (and may not). Despite its qualities, it doesn't quite captivate and has a slightly disturbingly bitter finish.
Anyways, I am going to follow future releases from Crystallum, because I like what they do with Pinot Noir.
