Oh wow, it's been almost a year since I last tasted this release - and drinking it now is pure pleasure. Aromatically, it leans into cider, damp cellar, linden honey, bruised apples, yellow fruit, a touch of flor and floral lift. Super fresh, beautifully intense, with a great balance between acidity, texture, and flavour. Complex, delicious, and hitting a lovely stride right now.
This remains one of my favorite labels, consistently delivering a delightful experience. The nose is captivating, with aromas of damp cellar, bruised apples, honey, lemon candy, yellow plums, toast, and chalk. It surprises with its freshness---when served blind, most participants assumed it was remarkably young. The wine is voluminous, vinous, and persistent, with a wonderful chalky backbone. I absolutely love it and would savor it daily, if only my stash weren't dwindling.
It's fascinating to witness how this wine ages. Intense and sophisticated bouquet with notes of damp cellar, bruised apples, yellow plums, lemon candy, honey, and toast. Fresh, voluminous, vinous, persistent, mineral, and simply delicious with a neat chalky finish.
This wine is ageing gracefully, shifting from fruit-forward to a more complex profile with prominent notes of damp cellar, bruised apples, lemon candy and honey. The bakery aromas persist, enriching the bouquet and adding depth. On the palate, it is voluminous and enduring, characterized by freshness and precision with neat chalky backbone.
The 745 Cuvée screams to be enjoyed. Its bouquet is a rich tapestry, weaving together notes of croissant, chalk, Jerez, honey, stone fruits, and lemon candy. On the palate, it rolls smoothly, embodying freshness and an expanse of flavors. It's persistent and almost perfectly balanced. Its charm isn't just skin deep; it's a sophisticated allure that lingers, generously doling out encore after encore on the palate.
Tasted blind and didn't guess. Even more, I literally said that it's a traditional sparkling of a very good effort, but probably not Champagne. Somehow it lacked acidity and aftertaste. Baked apple with cinnamon and a half-spoon of honey. Gingerbread! After some time it reveals notes of Jerez with wet earth. It's fresh - the acidity is good, it could be higher, but there is nothing to counterbalance it. It lacks structure and persistence. The pear candy in the finish is really nice. Overall nice, but the other bottle of 745 I tasted recently was completely different (and that's not only my experience). The only observable difference - lot numbers (L18 vs L28).
P.S. Initially, I rated it 8.0 (e.g. 4.0/5.0) but increased it a bit after tasting all the other wines of the evening.
One of my favourite NV Champagnes. And I am happy that everyone I shared this wine with enjoyed it that much. A friendly and sophisticated style at the same time. A mixture of chalk, Jerez, honey, stone fruits and lemon candy. Round, fresh, flavourful, persistent and almost perfectly balanced. Criminal level of deliciousness.
