This dry white wine from the merchant, organic, natural and made without any added sulfites or chemical additives, comes to us straight from the land of muscadet, the Loire estuary. Moreover, 0.72 + blanc can be considered a muscadet and is drunk as such, being composed of 100% melon de Bourgogne (another name for the muscadet grape variety) planted in Maisdon-sur-Sèvre (Loire-Atlantique), an oceanic terroir, a mixture of plain and hillside. It was harvested and vinified in a fairly warm and round vintage, less acidic than average, and these characteristics appear naturally in the wine. "It tastes like the fire of God!" in the words of the winemaker, and its three years in the bottle before marketing have only polished it, chiseled it and improved it. "Gabbro, the older it is, the better it is," also confides its author: this wine can age considerably and will only be better for it, but it is excellent to drink straight away, very cold. But what is gabbro? It is a magmatic rock with a grainy texture resting on a granite subsoil, a pedological configuration specific to the Muscadet de Sèvre-et-Maine appellation area where the vines from which this wine is made grow and take deep root. Gabbro and granite are Vinilibre's preferred soils and constitute a precious wine heritage. The wine was aged in cement vats for a year, on lees, without any inputs. If the name of the vintage intrigues you, you should know that following a small technical incident during bottling, it originally did not contain exactly the standard quantity of 75cl, but at least 72cl (this is no longer the case in our new vintages, which are indeed 75cl). As we said, it tastes good and even very good: the distinctive features of the gabbro terroirs are there, with an elegant acidity mixed with a balancing roundness, a salty side, a salivating side that makes 0.72 an unfailing companion for raw seafood, oysters, sashimi and raw fish carpaccios. Notes of white flowers, soaked lilac flowers, salted pickles, and white peaches. Not a very expressive bouquet. Salty, racy, and light with a long aftertaste. It's an electric touch from a pickled sea.
