It's always a pleasure to drink a wine that evolves over the evening, thus creating voluminous communication between us. It is also a pleasure to drink wines produced by Rossignol-Trappet. This double match makes me happy. To be honest, I feared this wine would be dead because of improper storage conditions (it got lost in my drawer).

Initially, it burst with mushrooms and pickles. No traces of any fruits. But the initial shock from uncorking lifts away only to reveal fresh barberry fruits and peonies growing in a countryside garden close to a barnyard and a cigar-smoking person who manufactures (sic!) brânză and pickles at the same time. Over time the fruits got more tired of this life, thus revealing leather and a slightly sweaty horse while still maintaining fruits at its core. Almost perfectly balanced and fresh mouthfeel. Delicate and elegant, but somehow as spicy as an erroneous encounter in someone else's dorm.

Domaine Rossignol-Trapet

Domaine Rossignol-Trapet was established through the alliance of two families. The Rossignols were winemakers since the 16th century in Volnay. The Trapets - since the 18th century in Gevrey-Chambertin. Domaine owns 14 ha of old vineyards in the renowned villages of Beaune, Savigny-les-Beaune and Gevrey-Chambertin. Most of them are Pinot Noir, and only 0.7 ha are Chardonnay.

Nicolas and David Rossignol have been running the Domaine since the 1990s. They produce sophisticated, gorgeous and elegant wines.
